Roasted Rotisserie Chicken

What You Need

  • 1 pair Disposable gloves
  • 2 ½ cups chicken stock
  • 4 tablespoons unsalted butter (softened)
  • 2 teaspoons of Spice Trader Garlic Salt
  • 3 teaspoons of Spice Trader Italian Seasoning
  • 1 – 4.5 or 5 lb. roaster chicken

Directions

Preheat oven to 375 degrees F

In a small bowl, combine butter, garlic salt and Italian seasoning. Separate into two equal parts

(Prepare chicken by removing insert packet of giblets)

With gloved hands, gently lift the skin of chicken away from meat.  Using one part of the butter mixture, rub over the meat under the gently lifted skin to coat the evenly.

Using remaining butter mixture, rub on the outside of the skin.

Place the buttered roaster chicken on a rack and place the rack into a roasting pan.

Add the 2 ½ cups of chicken stock into the roaster. Bake for 2 hours or until meat when pierced, juice run clear.
